Ingredients
  

For the Chimichurri Sauce

For the Chicken Bowl

  • 2 pieces chicken breasts
  • 2 cups mixed greens Any mix of leafy greens can be used.
  • 2 cups roasted vegetables (e.g., bell peppers, zucchini) Vegetables can be varied based on preference.
  • Black pepper to taste
  • 1 cup fresh tomatoes, diced for garnish Add for color and flavor.

Instructions
 

Prepare the Chimichurri Sauce

  • In a medium bowl, mix together 1 cup of chopped parsley, 3 minced garlic cloves, 2 tablespoons of red wine vinegar, 1 tablespoon of oregano, 1 teaspoon of red pepper flakes, and a pinch of salt.
  • Slowly drizzle in 3 tablespoons of olive oil while whisking the mixture until well combined. Set aside.

Prepare the Chicken

  • Season the chicken breasts with olive oil, minced garlic, salt, and black pepper.
  • Preheat your grill to medium-high heat.
  • Grill the seasoned chicken for 6-7 minutes on each side or until cooked through.
  • Remove chicken from the grill and allow it to rest for a few minutes before slicing.

Sauté the Greens and Vegetables

  • In a large skillet, heat a drizzle of olive oil over medium heat.
  • Add the mixed greens and roasted vegetables, stirring occasionally until tender, about 5-7 minutes.

Assemble the Bowl

  • Start with a generous bed of sautéed mixed greens and roasted vegetables.
  • Arrange sliced grilled chicken on top and drizzle with chimichurri sauce.
  • Garnish with fresh diced tomatoes before serving.

Notes

For best flavor, let chicken marinate in chimichurri for at least 20 minutes before grilling. You can use different proteins or vegetables based on your preference.
