  • 2 cups cooked pasta Use any type like rotini, fusilli, or penne.
  • 1 cup cooked and shredded chicken Use leftover chicken or quickly cook chicken breasts.
  • 1 cup chopped vegetables Such as bell peppers, carrots, and cucumbers.
  • 1/4 cup chopped green onions
  • 1/4 cup sliced almonds Optional for added crunch.
  • 1/2 cup Asian-style dressing Like sesame ginger dressing.
  • Salt and pepper to taste

Preparation

  • Cook your pasta according to package instructions; drain and cool.
  • Shred cooked chicken using two forks.
  • Chop vegetables into bite-sized pieces.

Mixing Ingredients

  • In a large bowl, combine cooked pasta, shredded chicken, and chopped vegetables.
  • Pour the Asian-style dressing over the mixture and toss gently.
  • Add sliced almonds and chopped green onions, mixing again to combine.
  • Season with salt and pepper to taste.

Chilling

  • Cover the bowl with plastic wrap and chill for at least 30 minutes before serving.

Notes

For extra flavor, serve with additional sliced almonds and green onions. Leftovers can be stored in an airtight container in the fridge for up to three days. Add a splash of dressing if dry after storage.
