Ingredients
  

For the Shrimp

  • 1 pound shrimp, deveined and peeled Fresh shrimp yield the best flavor
  • 1/4 cup chipotle marinade Add more for a spicier kick
  • Juice of 1 lime lime Fresh lime juice enhances flavor

For the Bowl

  • 1 cup rice (white or brown) Cook according to package instructions
  • 1 each avocado, sliced Add more as desired
  • 1 can (15 ounces) black beans, rinsed and drained Can use canned or cooked beans
  • 1 cup corn (fresh, canned, or frozen) Variety can be used based on availability
  • to taste salsa (store-bought or homemade) Add for extra flavor

Instructions
 

Marinate the Shrimp

  • Combine peeled and deveined shrimp with chipotle marinade and the juice of one lime. Ensure all shrimp are well-coated and refrigerate for at least 30 minutes.

Cook the Rice

  • While the shrimp marinates, cook the rice following package instructions. Rinse, add to boiling water, and simmer until tender, approximately 15-20 minutes.

Sauté the Shrimp

  • Heat a skillet over medium heat and add the marinated shrimp. Cook for about 3-4 minutes, stirring occasionally until they turn pink and opaque.

Assemble the Bowls

  • In a serving bowl, layer the cooked rice as a base, top with cooked shrimp, and arrange sliced avocado, black beans, and corn over it.

Add the Finishing Touches

  • Top the bowl with salsa and optional lime wedges or tortilla strips before serving.

Notes

Garnish with fresh cilantro for added flavor. Ensure to store components separately for freshness if there are leftovers.
