  • 2 pieces grilled chicken breasts Season and grill until fully cooked.
  • 1 cup cooked rice Use any type of rice you prefer.
  • 1 cup black beans Drained and rinsed.
  • 1 cup corn Fresh or frozen.
  • 1 pieces avocado, sliced Use ripe avocados.
  • 1 cup diced tomatoes Fresh or canned.
  • 1/2 cup shredded cheese Cheddar, Monterey Jack, or your favorite.
  • 1/2 cup chipotle ranch dressing Store-bought or homemade.
  • 4 pieces large flour tortillas Warm slightly before assembling.
  • Salt and pepper to taste Season as desired.

Preparation

  • Season the grilled chicken breasts with smoky spices like paprika, cumin, and garlic powder.
  • Grill the chicken over medium heat until fully cooked, about 6-8 minutes per side.
  • While the chicken is grilling, warm the tortillas slightly in a pan or microwave.

Assembly

  • In each tortilla, start layering the ingredients: first, add a scoop of cooked rice.
  • Add black beans, then corn, followed by fresh avocado slices, diced tomatoes, and shredded cheese.
  • Once the chicken is grilled, slice it into strips and place it on top of the layered ingredients.
  • Drizzle chipotle ranch dressing over the top.
  • Fold the sides of the tortilla inward and roll it tightly from the bottom to the top, ensuring all ingredients are secure.
  • Optionally, grill the burrito seam-side down in a pan for 1-2 minutes for a golden finish.

Serving

  • Serve immediately, optionally with extra dressing, cilantro, tortilla chips, or salad on the side.

Notes

For added crunch, include chopped lettuce or shredded cabbage. For spice, diced jalapeños can be added. Leftovers can be easily reheated and used in other meals like quesadillas or salads.
