Ingredients
  

Toffee Layer

  • 9 pieces saltine crackers for the base of the toffee
  • 6 tbsp salted butter for the toffee
  • 6 tbsp brown sugar for the toffee
  • ¾ cup chocolate chips to sprinkle on top

Cookie Dough

  • 1 cup salted butter, browned browned for extra flavor
  • 1 cup brown sugar for sweetness
  • ½ cup granulated sugar for sweetness
  • 2 large eggs for binding
  • 1 tsp vanilla extract for flavor
  • 2 ¼ cups all-purpose flour for the cookie base
  • 1 tsp baking soda for leavening
  • ½ tsp salt to enhance flavor
  • Flaky sea salt for garnish to sprinkle on the cookies

Instructions
 

Preparation of Toffee

  • Preheat your oven to 400°F (200°C) and line a 9x9 inch pan with parchment paper.
  • Arrange the saltine crackers in a single layer in the pan.
  • In a small saucepan, combine the salted butter and brown sugar, bringing it to a boil while stirring continuously.
  • Once boiling, stop stirring and let it boil for about 2 ½ minutes to caramelize.
  • Carefully pour the toffee mixture over the saltine crackers.
  • Bake in the oven for approximately 6 minutes.

Preparation of Cookies

  • Remove the pan from the oven and sprinkle chocolate chips over the toffee.
  • Let the chocolate sit for 5 minutes, then spread it evenly with a spatula.
  • Allow to cool completely, then place in the freezer to harden.
  • In a saucepan, melt the additional cup of butter and cook until it turns golden brown.
  • In a bowl, mix the brown butter with the brown sugar and granulated sugar until smooth.
  • Add eggs and vanilla extract, blending until well combined.
  • In another bowl, whisk flour, baking soda, and salt together.
  • Gradually add the dry mixture to the wet ingredients until just incorporated.
  • Chop the hardened toffee into small squares and fold it into the cookie dough.
  • Use a cookie scoop to portion the dough onto a parchment-lined baking sheet.
  • Let the dough sit for 10 minutes, then sprinkle each ball with flaky sea salt.
  • Bake for 9-11 minutes or until the cookies are golden brown.

Serving

  • Arrange cookies on a festive platter, possibly drizzling with melted chocolate or adding more flaky sea salt.

Notes

For storage, keep cookies in an airtight container at room temperature for up to a week. They can also be frozen for longer storage.
