For the rice and toppings

  • 1 cup rice (preferably white or brown) Cooking it alongside the steak for best timing.

  • 1 cup corn (cooked, fresh or frozen) Sweet and nutritious.
  • 1 avocado (sliced) Provides creaminess.

Preparation

  • Marinate the steak by mixing olive oil, lime juice, cilantro, salt, and pepper in a bowl or resealable bag. Ensure the steak is evenly coated and let marinate in the refrigerator for at least 30 minutes.
  • Cook the rice by rinsing it under cold water and following package instructions, then stir in a splash of lime juice and chopped cilantro after cooking.

Cooking

  • Heat a grill or skillet over medium-high heat. Cook the marinated steak for about 4-6 minutes on each side until desired doneness.
  • Once cooked, let the steak rest on a cutting board for about 5 minutes to allow juices to redistribute.

Assembly

  • Slice the steak against the grain and start assembling the bowls with cilantro-lime rice as the base.
  • Layer sliced steak on top, followed by fresh vegetables like bell peppers, corn, and avocado. Optionally add a dollop of sour cream.

Notes

Store leftovers in airtight containers and consume within 3-4 days. Add avocado right before serving to prevent browning. Customizable with different toppings and proteins.
