  • 1/4 cup flour For dusting the chicken.
  • 1/4 cup coconut cream or coconut milk
  • Salt and pepper to taste
  • Vegetable oil for frying For frying the chicken.

Preparation

  • Preheat your oven to 400°F (200°C) or heat the vegetable oil in a deep fryer or a large skillet over medium-high heat.
  • In a mixing bowl, combine the shredded coconut, breadcrumbs, and a sprinkle of salt and pepper.
  • Coat each chicken strip in flour, shaking off any excess. Dip the floured chicken into the beaten eggs.
  • Roll the chicken strips in the coconut and breadcrumb mix, ensuring they are evenly coated.

Cooking

  • Arrange the coated chicken strips on a baking sheet lined with parchment paper, spray lightly with cooking spray, and bake for 20-25 minutes, flipping halfway through.
  • If frying, place the chicken strips in the hot oil and fry for about 4-5 minutes on each side until golden brown and cooked through.
  • Check that the internal temperature of the chicken reaches 165°F (74°C).

Serving

  • Transfer the cooked coconut chicken to a paper towel to drain excess oil if frying.
  • Serve with dipping sauces like sweet-and-spicy sauce, honey mustard, or a coconut cream dip.
  • Consider serving alongside a fresh salad, steamed vegetables, or rice for a complete meal.

Notes

Customize the coconut and breadcrumb mixture to adjust flavor; bake for a lighter option. Store leftovers in an airtight container for 3-4 days or freeze for longer storage.
