Preparation

  • Gather all the ingredients. Dice the chicken breasts into bite-sized pieces, mince the garlic, and grate the ginger.

Cooking

  • Heat the vegetable oil in a large skillet over medium-high heat. Add the diced chicken and season with salt and pepper. Cook for about 6-8 minutes until golden and cooked through.
  • Add the minced garlic and grated ginger to the skillet and sauté for 1-2 minutes until fragrant.
  • Pour in the coconut milk, then stir in the soy sauce and lime juice. Let it simmer gently for 5-10 minutes.
  • Prepare your rice according to package instructions. Once cooked, stir the rice into the coconut chicken mixture until evenly coated.

Notes

For meal prep, store components separately to maintain texture. You can substitute chicken thighs for more moisture, or use chicken broth with cream if coconut milk is unavailable. Adding vegetables like bell peppers during cooking enhances nutrition.
