  • 1 cup shredded coconut Use fresh or unsweetened for best flavor.
  • 1/2 cup butter, softened Ensure it's at room temperature.
  • 1 cup sugar
  • 2 large eggs Room temperature.
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup chopped pecans or chocolate chips Optional mix-ins.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the softened butter and sugar and cream together until light and fluffy (about 2-3 minutes).
  • Add eggs and vanilla extract, beating until well combined.
  • In another bowl, whisk together flour, baking powder, and salt.
  • Gradually mix the dry ingredients into the wet ingredients until just combined.
  • Fold in shredded coconut and optional ingredients if using.
  • Drop spoonfuls onto a greased baking sheet, spacing them about two inches apart.

Baking

  • Bake for 10-12 minutes until golden around the edges and soft in the center.
  • Remove from oven and let cool on the baking sheet for a few minutes before transferring to wire racks.

Notes

Store cookies in an airtight container at room temperature. For longer storage, freeze them layered with parchment paper.
