  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup chocolate chips
  • 1 tbsp instant coffee granules Freshness is key for flavor.
  • 1/2 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt

  • 1/2 cup unsalted butter, melted
  • 1 large egg

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the melted butter, sugar, and brown sugar, mixing until smooth and creamy.
  • Add the egg and instant coffee granules, blending until well combined.
  • In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking soda, cinnamon, and salt.
  • Gradually add the dry ingredients to the wet mixture and fold gently until just combined.
  • Fold in the chocolate chips.
  • Drop spoonfuls of cookie dough onto the lined baking sheet, leaving space between each scoop.

Baking

  • Bake for 10-12 minutes until edges are set but centers are soft.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Serving

  • Serve warm or at room temperature with your favorite beverage, optionally dusted with powdered sugar or drizzled with melted chocolate.

Notes

For thicker cookies, consider chilling the dough for 30 minutes before baking. Store cookies in an airtight container at room temperature for 3-5 days or refrigerate for up to a week. Freeze for up to three months.
