  • 2 3/4 cups all-purpose flour Sifted before measuring
  • 1 tablespoon baking powder To help the cake rise
  • 1/2 teaspoon baking soda For extra leavening

Wet Ingredients

  • 1 cup unsalted butter, softened At room temperature
  • 2 cups granulated sugar For sweetness
  • 4 large eggs Room temperature
  • 1 tablespoon vanilla extract For flavor
  • 1 cup buttermilk At room temperature

Add-ins

  • 1 cup rainbow sprinkles For color and sweetness

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease and flour three 8-inch round cake pans.

Mixing the Batter

  • In a mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  • In a larger bowl, cream the softened unsalted butter and granulated sugar until light and fluffy.
  • Add the eggs one at a time, blending well after each addition, then stir in the vanilla extract.
  • Gradually add the flour mixture to the butter mixture, alternating with the buttermilk, beginning and ending with the dry mixture.
  • Gently fold in the rainbow sprinkles.

Baking

  • Divide the batter evenly among the three prepared pans.
  • Bake in the preheated oven for 25-30 minutes or until a toothpick inserted comes out clean.
  • Cool the cakes in the pans for 10 minutes before transferring to wire racks to cool completely.

Frosting and Serving

  • Once cooled, frost the cake with your choice of frosting and decorate with additional rainbow sprinkles.
  • Serve with vanilla ice cream or whipped cream if desired.

Notes

Use room temperature ingredients for better mixing. Store covered to keep fresh.
