  • 1 large chicken breast, diced
  • 1 cup carrots, finely shredded
  • 4 tablespoons butter
  • ½ cup onion, finely diced
  • 1 tablespoon garlic, minced
  • 3 cups water
  • 1 tablespoon chicken bouillon
  • 4 cups half and half
  • ¼ cup all-purpose flour
  • 16 ounces ready-to-use gnocchi
  • 1 cup spinach leaves, coarsely chopped

Preparation

  • Dice the chicken breast into small pieces and finely shred the carrots.
  • In your slow cooker, add the butter, diced onion, minced garlic, grated carrots, and diced chicken.
  • Mix the chicken bouillon into the water until it's dissolved, then pour this broth mixture into the crock pot with the other ingredients.

Cooking

  • Set your slow cooker to high and cook for about four hours.
  • In a separate bowl, mix the all-purpose flour with the half and half until smooth.
  • Pour the cream mixture into the slow cooker and stir to combine.
  • Stir in the gnocchi and let it cook on high for an additional hour.
  • Add the coarsely chopped spinach and cook for an additional 15 minutes.

Serving

  • Ladle the soup into bowls and enjoy.

Notes

Serve with a fresh garden salad and warm crusty bread. For a restaurant-style touch, sprinkle grated Parmesan cheese on top before serving.
