Ingredients
  

Marinade

  • 4 tablespoons unsalted butter Melted
  • 3 cloves garlic (minced)
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • ½ teaspoon red pepper flakes
  • 2 tablespoons fresh parsley (chopped)
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Chicken and Vegetables

  • 500 grams chicken thighs (boneless and skinless) Cut into bite-sized pieces
  • 1 red onion (cut into chunks)
  • 1 bell pepper (cut into chunks)

Instructions
 

Preparation

  • Melt the butter in a small saucepan or microwave-safe bowl until liquefied.
  • Whisk in minced garlic, lemon juice, Dijon mustard, smoked paprika, red pepper flakes, chopped parsley, salt, and black pepper to create the marinade.
  • Place the chicken pieces in a bowl and pour the marinade over them. Toss until well coated.
  • Allow the chicken to marinate for at least 30 minutes, or up to 2 hours for enhanced flavor.

Grilling

  • Assemble the skewers by threading marinated chicken pieces, alternating with chunks of red onion and bell pepper.
  • Preheat your grill or grill pan over medium-high heat.
  • Grill the skewers for about 10 to 12 minutes, turning occasionally until the chicken is cooked through and slightly charred.
  • Let the skewers rest for a few minutes before serving.

Notes

For added flavor, marinate the chicken overnight. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
