For the Cookies

  • 1 cup butter, softened Ensure butter is softened before starting.
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs Use room temperature for better mixing.
  • 1 tsp pure vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 cups old-fashioned rolled oats
  • 2 cups semi-sweet chocolate chips
  • 1 cup chopped pecans Can be substituted with nuts of choice.

Preparation

  • Preheat the oven to 350°F (175°C).
  • Line your baking sheets with parchment paper.
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar for 2-3 minutes until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Then mix in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  • Gradually add the dry mixture to the wet ingredients and mix until just combined.
  • Fold in the oats, chocolate chips, and chopped pecans gently.
  • Drop tablespoon-sized mounds of cookie dough onto the prepared baking sheets, spacing them about 2 inches apart.

Baking

  • Bake the cookies for 10-12 minutes, until the edges are golden and the centers are slightly underdone.
  • Allow the cookies to cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

Serve warm with milk or ice cream for a delightful treat. Store in an airtight container to maintain freshness.
