Preparation

  • Heat a large pot over medium heat.
  • Add the sausage and cook until browned, about 5-7 minutes.
  • Stir in the chopped onion and minced garlic, cooking for 3-4 minutes until the onion is translucent.
  • Add the diced potatoes, stirring to combine with the sausage, onion, and garlic.
  • Pour in the chicken broth and bring to a boil.

Cooking

  • Once boiling, reduce heat to low and let simmer for 15-20 minutes until potatoes are fork-tender.
  • Stir in heavy cream and shredded cheese, cooking until heated through and cheese is melted.
  • Taste and add salt and pepper to preference.
