  • 1 lb crab meat Use fresh crab for best flavor.
  • 1 lb shrimp, peeled and deveined Fresh or thawed frozen shrimp can be used.

Soup Base

  • 4 cups seafood stock Homemade or store-bought.
  • 1 medium onion, diced Provides a foundational flavor.
  • 2 cloves garlic, minced Enhances the aroma.
  • 1/2 cup white wine Optional, adds depth of flavor.
  • 1/4 cup butter For sautéing the base.
  • 2 tablespoons tomato paste Gives sweetness and color.
  • 1 teaspoon Old Bay seasoning Key seasoning for seafood dishes.
  • Salt to taste salt and pepper For seasoning.

Creamy Finish

  • 2 cups heavy cream Makes the bisque creamy and rich.

Instructions
 

Preparation

  • Melt the butter in a large pot over medium heat.
  • Add the diced onion and minced garlic and sauté until soft and translucent, about 3-4 minutes.
  • Stir in the tomato paste and cook for about one minute.
  • Pour in the seafood stock, scraping the bottom of the pot gently.
  • Add the Old Bay seasoning and bring to a gentle simmer.

Cooking

  • Fold in the crab meat and shrimp, cooking for about 5 minutes until the shrimp is pink and cooked through.
  • Reduce heat slightly and stir in the heavy cream, seasoning with salt and pepper to taste.
  • Allow the bisque to simmer for an additional 10 minutes to meld flavors.

Serving

  • Ladle hot bisque into bowls and garnish with freshly chopped parsley.

Notes

Serve in crafted bowls or bread bowls; ideal with crusty bread. Can be made ahead and stored in the refrigerator for up to 3-4 days.
