Preparation

  • Gather all your ingredients. Ensure that your steak is at room temperature.
  • Fill a large pot with water, add a generous pinch of salt, and bring it to a boil for your tortellini.

Cook Tortellini

  • Once the water is boiling, add the cheese tortellini and follow the package instructions for cooking time, typically about 3-5 minutes.
  • Stir occasionally until they float, indicating they are cooked. Drain the tortellini and set it aside.

Season and Sear the Steak

  • While the tortellini is cooking, season your steak liberally with salt, black pepper, garlic powder, and smoked paprika.
  • Heat the olive oil in a large skillet over medium-high heat and sear the steak for about 4-5 minutes on each side for medium-rare.
  • Remove the steak from the skillet and let it rest while preparing the sauce.

Make the Creamhouse Sauce

  • In the same skillet, reduce the heat to medium. Add the butter and minced garlic, sauté for about 1-2 minutes until fragrant.
  • Pour in the heavy cream and whole milk, stirring to combine, and let simmer gently for a few minutes until it thickens slightly.
  • Gradually mix in the Parmesan cheese, stirring until the cheese melts completely and the sauce is smooth.
  • Taste the sauce and adjust seasoning if needed.

Combine Everything

  • Slice the rested steak into strips. Add the cooked tortellini and steak pieces to the sauce, mixing well to coat.
  • Optionally add some chopped parsley and red pepper flakes before serving.

Serve

  • Plate the tortellini and steak in shallow bowls with a sprinkle of chopped parsley and optional red pepper flakes.
