For the Chicken

  • 1 whole whole chicken, cut into pieces Opt for fresh, high-quality chicken.
  • 6 cups chicken broth Homemade broth can enhance the flavor.
  • 1 cup water

For the Dumplings

  • 2 cups all-purpose flour Can substitute with gluten-free flour blend.
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup shortening Cut in until resembling coarse crumbs.
  • 2/3 cup milk Gradually stir to form moist dough.

For the Vegetables

  • 1/2 cup chopped onions
  • 1/2 cup sliced carrots
  • 1/2 cup celery, chopped
  • to taste Salt and pepper Adjust seasoning to taste.

Cooking the Chicken

  • Place the chicken pieces in a large pot. Pour in the chicken broth and water, then bring to a boil.
  • Reduce the heat and let it simmer until the chicken is cooked through, about 30-40 minutes.
  • Carefully remove the chicken from the pot and allow it to cool.

Preparing the Chicken

  • Once cool, shred the chicken into bite-sized pieces and set aside.

Making the Dumpling Dough

  • In a bowl, combine flour, baking powder, and salt. Mix until well blended.
  • Cut in shortening until the mixture resembles coarse crumbs, then gradually stir in the milk until a moist dough forms.
  • Roll out the dough to about 1/4 inch thick and cut into strips.

Cooking the Vegetables

  • Add chopped onions, carrots, and celery to the pot with the broth and let them cook until tender, about 10-15 minutes.

Cooking the Dumplings

  • Drop the dumpling strips into the simmering broth and cook for about 10-15 minutes until fluffy.
  • Stir gently to prevent sticking.

Finalizing the Dish

  • Return the shredded chicken to the pot and season with salt and pepper. Stir gently and let it heat through before serving.
  • Serve hot in bowls with the delicious broth.

Notes

For a thicker broth, you can mix cornstarch with cold water during cooking. Allow resting before serving for richer flavors.
