Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar Adjust if you prefer a sweeter bread.
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 1/2 cup orange juice
  • 1/2 cup vegetable oil Can substitute with melted butter or coconut oil.
  • 2 large eggs

Add-ins

  • 1 cup fresh cranberries Fresh is best; if using frozen, do not thaw.
  • 1 zest orange

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a loaf pan well to prevent sticking.

Mixing Ingredients

  • In a large mixing bowl, combine the dry ingredients: flour, sugar, baking powder, and salt. Stir well.
  • In another bowl, whisk together the wet ingredients: orange juice, vegetable oil, and eggs.
  • Pour the wet mixture into the dry ingredients and stir gently until just combined.
  • Fold in cranberries and orange zest carefully.

Baking

  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for about 10-15 minutes before transferring it to a cooling rack.

Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
