Ingredients
  

For the Pie Crust

  • 1.25 cups all-purpose flour
  • 0.5 tsp salt
  • 1 tbsp sugar
  • 0.5 cup unsalted butter (chilled and cubed)
  • 4 tbsp ice water (as needed)

For the Filling

  • 3 cups fresh or frozen cranberries
  • 0.75 cup granulated sugar
  • 2 tbsp brown sugar
  • 2 tbsp all-purpose flour
  • 1 tsp orange zest
  • 0.25 cup orange juice (freshly squeezed)
  • 1 tsp vanilla extract
  • 0.5 tsp cinnamon
  • 1 pinch salt

For the Streusel Topping

  • 0.75 cup all-purpose flour
  • 0.5 cup rolled oats
  • 0.5 cup brown sugar
  • 0.5 tsp cinnamon
  • 0.25 tsp nutmeg
  • 0.5 cup unsalted butter (cold and cubed)

Preparing the Pie Crust

  • In a large bowl, combine all-purpose flour, salt, and sugar.
  • Cut chilled butter into the flour mixture until it resembles coarse crumbs.
  • Gradually add ice water, stirring until the dough begins to hold together.
  • Wrap the dough in plastic wrap and refrigerate for about 30 minutes.

Preparing the Cranberry Filling

  • In a saucepan, mix cranberries, granulated sugar, brown sugar, flour, orange zest, orange juice, vanilla extract, cinnamon, and a pinch of salt.
  • Cook over medium heat, stirring occasionally, until the cranberries burst and the filling thickens, about 10 minutes.
  • After cooking, let the filling cool.

Making the Streusel Topping

  • In a separate bowl, mix all-purpose flour, rolled oats, brown sugar, cinnamon, and nutmeg.
  • Cut in the cold butter until the mixture becomes crumbly.

Assembling and Baking the Pie

  • Preheat the oven to 375°F (190°C).
  • Roll out the chilled pie dough on a lightly floured surface and fit it into a pie pan.
  • Pour the cooled cranberry filling into the prepared crust and spread it evenly.
  • Sprinkle the crumbly streusel topping generously over the cranberry layer.
  • Bake in the preheated oven for about 40-45 minutes, or until the filling is bubbly and the topping is golden brown.
  • Allow the pie to cool completely before slicing.

Notes

Serve at room temperature with a dollop of whipped cream or vanilla ice cream. Garnish with additional orange zest or a cinnamon stick for an appealing presentation.
