  • 4 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt to taste
  • 1 teaspoon freshly ground black pepper to taste
  • 2 tablespoons olive oil divided
  • 1 cup fresh spinach leaves, chopped
  • 1/2 cup dried cranberries, chopped
  • 4 ounces Brie cheese, rind removed and sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 tablespoon balsamic vinegar
  • 1/4 cup chicken broth or water
  • Toothpicks or kitchen string for securing the chicken

Preparation

  • Preheat your oven to 375°F (190°C).
  • Place each chicken breast between two sheets of plastic wrap or parchment paper and gently pound the chicken to about 1/4 inch thick.
  • Season both sides of each chicken breast with salt, pepper, garlic powder, onion powder, and dried thyme.
  • In a skillet, heat 1 tablespoon of olive oil over medium heat, add the chopped spinach, and sauté until wilted (2-3 minutes). Remove from heat and transfer to a mixing bowl.
  • Add chopped dried cranberries and slices of Brie cheese to the spinach, stirring to combine.
  • Spoon an equal amount of the warm filling onto one half of each flattened chicken breast, then fold the other half over the filling and secure with toothpicks or kitchen string.

Cooking

  • Heat the remaining tablespoon of olive oil in the skillet over medium-high heat, then sear each side of the stuffed chicken breasts for about 3-4 minutes until golden brown.
  • Transfer the seared chicken to a baking dish and drizzle with balsamic vinegar and chicken broth.
  • Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through and the cheese has melted.
  • Let the chicken rest for a few minutes before removing toothpicks or string. Slice to reveal the filling if desired.

Notes

For a great presentation, slice the chicken breast to reveal the filling. Pair it with seasonal vegetables and a light salad for a complete meal. Consider adding garnishes like fresh herbs for an elegant touch.
