  • 2 teaspoons baking powder
  • 2.5-3 cups all-purpose flour Use more if dough is too sticky.

Preparation

  • Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  • In a large bowl, beat the softened cream cheese and butter together until smooth and creamy.
  • Gradually add the granulated sugar and powdered sugar, beating until well combined.
  • Crack in the egg and pour in the vanilla extract. Blend until fully incorporated.
  • In another bowl, whisk together the baking powder, salt, and 2 ½ cups of flour before gradually adding it to the wet mixture.
  • Mix until you reach a soft dough; add more flour if the dough is too sticky.
  • Scoop out tablespoon-sized portions of dough and roll into balls, placing them on prepared sheets with 2 inches apart.

Baking

  • Bake for 10-12 minutes, or until the edges are lightly golden.
  • Remove from the oven and let cool on baking sheets before transferring to a wire rack.

Notes

To prevent sogginess, cool cookies completely before storing. Store in an airtight container with parchment between layers.
