  • 8 oz pasta (any type you prefer)
  • 1 lb chicken breast, diced
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • 1 cup Parmesan cheese, grated
  • Chopped parsley for garnish

Instructions
 

Prepare Pasta

  • Cook the pasta according to the package instructions, then drain and set aside.

Cook Chicken

  • In a large skillet, heat the olive oil over medium heat.
  • Add the diced chicken, seasoning it with salt, pepper, and Cajun seasoning.
  • Cook until browned and fully cooked through, about 5 to 7 minutes, then remove from skillet.

Make Sauce

  • In the same skillet, add chopped onions and minced garlic, sauté until onions are soft and translucent, about 3 to 4 minutes.
  • Pour in chicken broth and bring to a gentle simmer, scraping bits off the bottom.
  • Stir in heavy cream and grated Parmesan cheese, stirring until the cheese melts and the sauce thickens, about 5 minutes.

Combine

  • Return the cooked chicken and drained pasta to the skillet, tossing to combine.
  • Add a splash of chicken broth if needed for consistency. Heat through and serve.

Serve

  • Plate the pasta in deep bowls, garnish with chopped parsley and extra Cajun seasoning if desired.

Notes

Consider adding bell peppers, spinach, or mushrooms for extra nutrition. Reheat leftovers on low heat and add a splash of cream for best results.
