  • 2 cups chicken broth Homemade is preferred for better flavor.
  • 1 cup heavy cream Can substitute with half-and-half for a lighter version.
  • 1 tablespoon Cajun seasoning Adjust according to spice preference.

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add diced onion, minced garlic, and diced bell pepper. Sauté for about 5-7 minutes until softened and fragrant.
  • Stir in the shredded chicken and Cajun seasoning. Cook for an additional minute.
  • Pour in the chicken broth, stir thoroughly, and bring to a gentle simmer.
  • Reduce heat to low and stir in the heavy cream, allowing the soup to simmer for another 10-15 minutes.
  • Taste and add salt and pepper according to preference.
  • Ladle the soup into bowls and garnish with green onions before serving.

Notes

Serve hot, optionally with crusty bread or a fresh salad. Garnish with parsley or additional Cajun seasoning to enhance flavor.
