  • 1 cup mixed vegetables Like peas and carrots; adjust according to preference.
  • 1 teaspoon garlic powder Adds flavor.
  • 1 teaspoon onion powder Adds flavor.
  • to taste salt and pepper Season to your preference.
  • Fresh herbs (like parsley or thyme) For garnish before serving.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the cooked rice and shredded chicken.
  • Add the cream of chicken soup, chicken broth, and sour cream.
  • Stir in the mixed vegetables, garlic powder, onion powder, salt, and pepper.
  • Mix well until all ingredients are evenly combined.
  • Transfer the mixture into a greased baking dish and spread evenly.
  • Cover with foil and bake for 25-30 minutes.
  • Remove the foil and bake for an additional 10 minutes until golden and bubbling.
  • Garnish with fresh herbs before serving.

Notes

This dish can be modified easily. Add cheese, change the type of vegetables, or even make it vegetarian.
