  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 3 tablespoons Dijon mustard
  • 1 cup chicken broth
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Salt and pepper, to taste

Preparation

  • Season the chicken breasts with salt and pepper on both sides.

Cooking Chicken

  • Heat olive oil in a large skillet over medium heat. Add the seasoned chicken breasts and cook for 6-7 minutes on each side until golden brown and fully cooked.
  • Transfer the cooked chicken to a plate and set aside.

Making the Sauce

  • In the same skillet, add the finely chopped onion and sauté for 3-4 minutes until translucent.
  • Stir in the minced garlic and cook for an additional minute.
  • Pour chicken broth into the skillet, scraping the bottom to release any bits stuck to the pan. Allow to simmer for 2-3 minutes.
  • Add the heavy cream and Dijon mustard, stirring until well combined. Let simmer for about 5 minutes to thicken.
  • Return the chicken to the skillet, ensuring it is well coated in sauce. Cook for another 2-3 minutes until heated through.

Serving

  • Remove from heat and garnish with fresh chopped parsley. Serve hot.

Notes

For best results, ensure chicken breasts are of even thickness. Adjust mustard amount based on your taste preference.
