  • 4 cups chicken broth High-quality broth recommended.
  • 1 cup heavy cream Add at the end for creaminess.
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking Use for sautéing vegetables.
  • Fresh parsley for garnish Adds color and flavor.

Preparation

  • Heat a splash of olive oil in a large pot over medium heat.
  • Add diced carrots, celery, and onion. Sauté for about 5 minutes until softened.
  • Stir in minced garlic and cook for an additional minute.

Cooking

  • Add shredded chicken, chicken broth, and Italian seasoning to the pot. Stir and bring to a gentle boil.
  • Once boiling, reduce heat and stir in the potato gnocchi. Cook according to package instructions until they float.
  • Stir in the heavy cream and let simmer for an additional 5 minutes.
  • Adjust seasoning with salt and pepper to taste.
  • Serve the soup in bowls, garnished with fresh parsley.

Notes

For a make-ahead option, prepare up to adding the cream and store in the refrigerator. Add cream before serving. You can freeze the soup base without gnocchi for longer storage.
