Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion, diced carrots, and diced celery. Sauté for 5-7 minutes until softened, adding the minced garlic in the last minute.
  • Pour in the chicken broth and bring to a gentle boil.
  • Add the egg noodles and cook according to package instructions until al dente.
  • Stir in the shredded chicken, heavy cream, and dried thyme. Let cook for about 5 minutes to heat through.
  • Season with salt and pepper to taste. Serve hot.

Notes

Serve with warm crusty bread or soft dinner rolls. A sprinkle of fresh parsley and a dash of hot sauce adds a nice touch.
