  • 1 15-ounce can black beans, drained and rinsed
  • 1 10-ounce can diced tomatoes with green chilies
  • 1 cup diced potatoes (peeled or unpeeled)

  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin

Preparation

  • Begin by heating a large pot over medium heat. Add the ground beef and brown it thoroughly, breaking it into smaller pieces with a spatula. Cook until it’s no longer pink, about 5-7 minutes. Drain any excess fat if needed.
  • Add the diced onion and minced garlic to the pot with the beef. Sauté for about 3-4 minutes until the onion becomes translucent and fragrant.
  • Pour in the beef broth, diced tomatoes (with juice), corn, black beans, and diced potatoes. Stir everything together.

Cooking

  • Increase the heat slightly and bring the soup to a gentle boil. Once boiling, reduce the heat and let it simmer for about 20-25 minutes.
  • Slowly stir in the heavy cream or half-and-half, mix well. Add the smoked paprika, chili powder, ground cumin, and season with salt and black pepper to taste. Allow it to simmer for another 5 minutes.

Serving

  • Ladle the Creamy Cowboy Soup into bowls. Top generously with shredded cheddar cheese, sliced green onions, and sprinkle crushed tortilla chips on top before serving hot.
