  • 2 tablespoons olive oil For sautéing
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 pound boneless, skinless chicken breast, diced
  • 6 cups chicken broth
  • 1.5 cups uncooked orzo pasta
  • 1 cup heavy cream
  • 2 medium lemons, zested and juiced

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add diced onions, carrots, and celery. Sauté for about 4-5 minutes until softened.
  • Stir in minced garlic and sauté for an additional minute.
  • Add diced chicken breast, season with salt and pepper, and cook for 5-7 minutes until chicken is no longer pink.
  • Pour in the chicken broth and bring to a gentle boil.
  • Add uncooked orzo and cook according to package instructions, typically around 9-11 minutes, until al dente.

Finishing

  • Reduce heat and stir in heavy cream, lemon zest, and lemon juice.
  • Taste and adjust seasoning if needed.
  • Allow to simmer gently for about 5-10 minutes.
  • Serve in warm bowls and garnish with fresh parsley.

Notes

For best results, use fresh ingredients and adjust lemon seasoning to taste. Store leftovers in an airtight container in the fridge for 3-4 days or freeze for longer storage.
