  • 2 fillets salmon fillets Fresh, preferably wild-caught
  • 2 tablespoons olive oil For cooking
  • 2 tablespoons butter For cooking
  • 3 cloves garlic, minced
  • 1/4 cup lemon juice Freshly squeezed
  • 1/2 cup heavy cream
  • 2 tablespoons capers
  • to taste Salt and pepper
  • for garnish Fresh parsley Chopped

Preparation

  • Heat olive oil and butter in a skillet over medium heat.
  • Season salmon fillets with salt and pepper.
  • Place salmon in the skillet, skin side down, and cook for about 4-5 minutes on each side until golden and fully cooked.
  • Remove salmon from skillet and set aside.

Making the Sauce

  • In the same skillet, add minced garlic and sauté for about a minute until fragrant.
  • Pour in lemon juice and scrape the bottom of the skillet to release brown bits.
  • Add heavy cream and stir gently to combine.
  • Add capers and let the sauce simmer for 2-3 minutes until it slightly thickens.

Finishing Touches

  • Return the salmon to the skillet and spoon sauce over fillets.
  • Allow to heat through for another minute.
  • Plate the salmon, garnish with fresh parsley, and serve.

Notes

Taste and adjust seasonings as necessary. Consider adding lemon zest for extra flavor. Serve with rice, mashed potatoes, or roasted vegetables.
