Sauce Ingredients

  • 2 cups mushrooms, sliced (cremini or button) Fresh is preferred for better flavor.
  • 2 cloves garlic, minced Adjust based on preference.
  • 1 cup heavy cream For a richer sauce.
  • 1/2 cup grated Parmesan cheese Can substitute with Gruyère or fontina for variation.
  • 2 tbsp olive oil For sautéing the mushrooms.
  • Salt and pepper to taste Adjust seasoning to preference.
  • Fresh parsley for garnish Chopped finely for serving.

Preparation

  • Cook your pasta according to package instructions until al dente, reserving a bit of the cooking water.
  • In a large skillet, heat olive oil over medium heat.
  • Sauté sliced mushrooms for 5 to 7 minutes until tender and golden brown.
  • Add minced garlic and cook for 1-2 minutes, being careful not to burn it.
  • Pour in heavy cream and bring to a gentle simmer, letting it warm up.
  • Stir in grated Parmesan cheese and season with salt and pepper.
  • Toss the cooked pasta into the skillet, mixing until well-coated with the sauce.
  • Serve garnished with chopped parsley and additional Parmesan if desired.

Notes

For a thicker sauce, simmer longer or add more cheese. Variations include adding sautéed onions or vegetables like spinach and broccoli.
