Preparation

  • Heat olive oil in a large pot over medium heat.
  • Sauté the diced onion and minced garlic until the onion is translucent and fragrant.

Cooking

  • Add chicken breast to the pot and cook until browned on all sides.
  • Pour in chicken broth and bring to a gentle simmer for 20 minutes.
  • Remove chicken, shred into bite-sized pieces, and return to the pot.
  • Stir in heavy cream and add gnocchi, letting them simmer for 3-5 minutes, or until they float.
  • Fold in spinach and thyme, cooking until spinach wilts.
  • Season with salt and pepper to taste.
