  • 1 cup cooked shell pasta or your favorite shape
  • 1 link Applegate chicken sausage sliced
  • 1 small zucchini sliced
  • 1 handful fresh spinach
  • ¼ cup light or reduced-fat cream cheese or Alfredo sauce
  • to taste Salt & pepper
  • 1 tsp olive oil or olive oil spray

Preparation

  • Cook the shell pasta according to package instructions. Drain and set aside, reserving a bit of pasta water.
  • In a medium skillet, spray olive oil or add 1 teaspoon of olive oil over medium heat. Add the sliced zucchini and sauté for 3-4 minutes until golden and tender.
  • After the zucchini is cooked, add the fresh spinach and sauté until it wilts down.
  • Toss in the sliced chicken sausage and sauté for about 5 minutes until heated through.
  • Stir in the cooked pasta with the sautéed vegetables and sausage, then mix in the cream cheese or Alfredo sauce.
  • If the mixture is too thick, add the reserved pasta water to reach desired creaminess.
  • Season with salt and pepper to taste and serve warm.

Notes

This dish can be easily customized with other veggies like bell peppers or peas. Consider garnishing with fresh herbs or Parmesan cheese.
