  • In a large pot, heat the olive oil over medium heat. Once hot, add the Italian sausage. Cook until nicely browned, breaking it apart with your spoon.
  • Add the diced onion and minced garlic. Sauté until the onion becomes translucent, creating a lovely aroma.
  • Pour in the chicken broth, stirring to combine. Bring to a gentle simmer.
  • Stir in the gnocchi and cook for about 2-3 minutes, or until they start floating to the surface.
  • Add the fresh spinach and stir until wilted.
  • Reduce heat and stir in the heavy cream. Season with salt and pepper to taste.
  • Ladle the soup into bowls, top with grated Parmesan cheese, and serve with crusty Italian bread.

Notes

For thickness, let it simmer longer after adding cream. Experiment with herbs and different proteins like turkey or vegetarian sausage.
