  • 2 pieces chicken breasts
  • 1 cup tomato paste
  • 1 cup heavy cream
  • 2 pieces fresh tomatoes, diced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking Generous amount for frying

Cooking

  • Heat a generous amount of olive oil in a large skillet over medium heat.
  • Season the chicken breasts with salt and pepper.
  • Place the seasoned chicken breasts in the skillet and cook until beautifully browned on both sides, about 6-7 minutes each side.
  • Remove the chicken from the skillet and set it aside on a plate.
  • In the same skillet, add tomato paste, heavy cream, diced tomatoes, and Italian seasoning. Stir together into a thick sauce and cook for an additional 3-5 minutes.
  • Return the cooked chicken to the skillet, coat it in the sauce, and let it simmer for another 2 minutes.
  • Serve over pasta, rice, or alone, garnished with fresh herbs if desired.

Notes

Let chicken come to room temperature for even cooking. Use fresh tomatoes for brightness, or canned for convenience. Optional: Add red pepper flakes for heat.
