  • 2 cups spinach or kale
  • 1 cup heavy cream

Preparation

  • In a large pot, heat 1 tablespoon of olive oil over medium heat.
  • Add the chopped onion and minced garlic to the pot. Sauté them until the onion becomes translucent and fragrant, about 3-5 minutes.
  • Pour in the vegetable or chicken broth and add the diced tomatoes. Bring the mixture to a gentle boil.

Cooking

  • Stir in the cheese tortellini, ensuring each piece is submerged, and cook according to package instructions, about 3-5 minutes, until tender.
  • Add in the spinach or kale and cook until the greens wilt, about 2-3 minutes.
  • Reduce heat to low, stir in the heavy cream, and mix until fully combined. Season with salt and pepper to taste.
  • Serve hot, ladling into bowls and sprinkle with grated Parmesan cheese.

Notes

For a complete meal, serve with crusty bread or breadsticks, and consider garnishing with fresh herbs like parsley or basil. Customize the greens and tortellini flavors to your liking.
