  • 2 cups carrots, chopped
  • 2 cups potatoes, peeled and diced
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can coconut milk
  • to taste Salt
  • to taste Pepper
  • as needed Olive oil For sautéing
  • as desired Fresh herbs for garnish Optional

Instructions
 

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onions and minced garlic; sauté until soft and fragrant.
  • Introduce chopped carrots and diced potatoes, stir for 5 minutes.

Cooking

  • Pour in the vegetable broth and bring to a gentle boil.
  • Reduce heat and let simmer for 20-25 minutes until vegetables are fork-tender.
  • Remove from heat and stir in the coconut milk.
  • Season with salt and pepper to taste.
  • Blend the soup until smooth using an immersion blender or countertop blender.

Serving

  • Ladle soup into bowls and garnish with fresh herbs if desired.
  • Serve warm, optionally with rustic bread or croutons on the side.

Notes

For deeper flavor, roast carrots and garlic beforehand. Adjust seasoning to preference.
