Ingredients
  

For the Cookie Dough

  • 1 cup unsalted butter, softened Make sure butter is at room temperature.
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs At room temperature.
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

For the Topping

  • 1 cup granulated sugar For caramelizing.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Add the vanilla extract and mix until combined.
  • In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  • Gradually fold the dry ingredients into the wet ingredients until just combined. Avoid over-mixing.
  • Drop rounded portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Baking

  • Bake in the preheated oven for 10 to 12 minutes, or until edges are golden and centers look slightly soft.
  • Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.

Caramelizing

  • After cooling, sprinkle granulated sugar on top of each cookie and use a kitchen torch to caramelize until it melts into a glossy, crispy layer.

Notes

Cookies can be served with coffee or tea. They can be frozen before baking for later use.
