  • 1 pound cod fillets Fresh or frozen, thawed and patted dry.
  • 1 cup breadcrumbs (preferably panko)
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil Lightly brush on fish.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)
  • Lemon wedges, for serving

Instructions
 

Preparation

  • Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  • In a mixing bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
  • In another bowl, brush each cod fillet lightly with olive oil. Make sure to coat both sides.
  • Dredge each fillet into the breadcrumb mixture, pressing gently to ensure the crumbs stick well.

Cooking

  • Place the coated cod fillets into the air fryer basket in a single layer, avoiding overcrowding.
  • Cook for 10-12 minutes, flipping halfway through until the crust is golden brown and the fish flakes easily with a fork.
  • Once cooked, carefully remove the fillets from the air fryer and plate them.

Serving

  • Garnish with fresh parsley and serve with lemon wedges.

Notes

For storage, let the cod cool completely before placing it in an airtight container. It can be refrigerated for up to three days. Reheat in the air fryer at 350°F (175°C) for 5-8 minutes to regain crispness.
