  • 2 cups cooked chicken (shredded)
  • 1 cup black beans (drained and rinsed)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • to taste Salt and pepper

Taquito Assembly

  • 10 small corn tortillas Warm them slightly for better rolling
  • Cooking spray or olive oil for brushing For crispy texture

Instructions
 

Preparation

  • Preheat your air fryer to 375°F (190°C).
  • In a large mixing bowl, combine the shredded chicken, black beans, cheese, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Mix well.
  • Warm the corn tortillas for about 20-30 seconds in the microwave or on a skillet for a few seconds on each side.
  • Spoon a small amount of filling onto each tortilla near one edge, and roll tightly.
  • Spray the outside of the rolled tortillas lightly with cooking spray or brush with olive oil.
  • Place the taquitos in a single layer in the air fryer basket.

Cooking

  • Air fry the taquitos for 8-10 minutes or until golden brown and crispy, flipping them halfway through.
  • Remove from the air fryer and let cool slightly before serving.

Notes

For best results, warm the tortillas before rolling to prevent cracking. Do not overfill to avoid spillage during cooking. Consider seasoning variations to cater to different tastes.
