Parmesan Herb Butter

  • 2 tablespoons unsalted butter Use quality butter for the best flavor.
  • 2 tablespoons chopped fresh parsley Fresh herbs elevate the dish.
  • 1 tablespoon chopped fresh rosemary Can substitute with sage.
  • 1 tablespoon chopped fresh thyme Adds earthiness to the butter.

Preparation

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine sweet potato cubes with olive oil, sea salt, black pepper, garlic powder, and smoked paprika. Toss until evenly coated.
  • Spread the sweet potatoes on the prepared baking sheet in a single layer, ensuring they are not overcrowded.

Baking

  • Bake in the preheated oven for 25-30 minutes, flipping halfway through for even browning.
  • Keep an eye on them during the last few minutes to avoid burning.

Making Herb Butter

  • While the sweet potatoes bake, melt the unsalted butter in a small saucepan over medium heat.
  • Stir in chopped parsley, rosemary, and thyme and cook for 1-2 minutes until fragrant.

Serving

  • Once sweet potatoes are crispy, remove from oven and sprinkle with grated Parmesan cheese.
  • Drizzle the herb butter over the sweet potatoes and toss gently to coat.
  • Serve immediately while hot.
