Preparation

  • Prepare the crispy chicken tenders. If vegetarian, cook tofu or tempeh until crispy and golden brown.
  • Slice the bell peppers and red onion into thin strips for easy sautéing.

Cooking

  • Heat olive oil or butter in a skillet over medium heat.
  • Sauté the sliced vegetables for about 5-7 minutes until tender yet crunchy.

Assembly

  • Lay out tortillas and warm them slightly to make them easier to roll.
  • Place crispy chicken or tofu in the center of each tortilla.
  • Top with sautéed bell peppers, onions, shredded cheese, and ranch dressing.
  • Fold in the sides and roll tightly from the bottom to enclose the filling.

Toasting
