  • 2 cups Cooked Jasmine or Basmati Rice Use day-old rice for the best texture.
  • 1 lb Boneless, Skinless Chicken Breast Cut into small pieces.
  • 1 tsp Cornstarch Creates a crispy coating.
  • 4 cloves Garlic Minced for an aromatic flavor.
  • 2 tbsp Olive Oil or Sesame Oil Adds richness.
  • 1 cup Frozen Peas and Carrots Thawed.
  • 3 Green Onions Sliced for garnish.
  • 2 Large Eggs Lightly beaten.
  • 3 tbsp Low-Sodium Soy Sauce For depth of flavor.
  • 1 tbsp Oyster Sauce Optional, for added richness.
  • 1/2 tsp Ground Black Pepper For warmth and spice.
  • 1 tbsp Water To create the cornstarch slurry.

Instructions
 

Preparation

  • Cut the boneless, skinless chicken breast into small, bite-sized pieces.
  • In a bowl, combine 1 teaspoon of cornstarch with 1 tablespoon of water and stir until smooth.
  • Coat the chicken pieces in the cornstarch slurry until evenly coated.

Cooking

  • Heat 2 tablespoons of olive oil or sesame oil in a large skillet or wok over medium-high heat.
  • Add the coated chicken pieces to the hot oil and cook for 5-7 minutes until golden brown and cooked through.
  • Transfer the cooked chicken to a plate and keep warm.
  • In the same skillet, add more oil if needed, sauté the minced garlic for about 30 seconds.
  • Add the thawed peas and carrots, and stir for another 2-3 minutes until heated through.
  • Push the veggies to one side and pour in the lightly beaten eggs; scramble until they just begin to set.
  • Incorporate the cooked rice, breaking up any clumps, and mix with the garlic and veggies.
  • Pour in the low-sodium soy sauce, optional oyster sauce, and sprinkle ground black pepper, then sauté for another 2-3 minutes.
  • Add the crispy chicken back into the skillet and stir well to combine flavors. Toss in the sliced green onions just before serving.

Notes

Serve with additional sliced green onions and soy sauce on the side. Pairs well with pickled vegetables or a light salad. Tastes great at room temperature.
