Ingredients

For the fries

  • 4 medium Russet potatoes (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 cup freshly grated Parmesan cheese
  • 3 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh parsley, chopped (optional)

Instructions

Preparation

  • Preheat your oven to 425°F (220°C). Preheating is crucial for achieving that perfect crispy texture.
  • Wash the Russet potatoes thoroughly, peel them, and slice into strips about half an inch thick.
  • Soak the potato strips in a bowl of cold water for at least 30 minutes to remove excess starch.
  • Drain the potato strips in a colander and pat dry thoroughly with a clean kitchen towel or paper towels.
  • In a large bowl, combine the dried potato strips with olive oil, minced garlic, salt, and black pepper. Toss until evenly coated.
  • Spread the seasoned potatoes in a single layer on a parchment-lined baking sheet, avoiding overcrowding.
  • Bake in the preheated oven for about 25-30 minutes, flipping halfway through for even cooking.
  • Once golden brown and crispy, remove from the oven and sprinkle freshly grated Parmesan cheese on top.
  • For added flavor and color, sprinkle chopped fresh parsley over the fries before serving.

Notes

For best results, choose Russet potatoes due to their high starch content. Make sure to soak and dry the potatoes properly to achieve maximum crispiness. Variations such as Sweet Potato Fries or Cheesy Loaded Fries can also be explored.
