Ingredients
  

For the shrimp

  • 1 pound large shrimp, peeled and deveined
  • 1 cup cornstarch
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 1 cup club soda
  • Vegetable oil for frying

For the orange sauce

  • 1 cup fresh orange juice Use fresh juice for the best flavor.
  • 1 Zest of one orange
  • 1/2 cup sugar
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 1-2 teaspoons crushed red pepper flakes (optional) Adjust to taste.

Preparation

  • Start by preparing the shrimp. Rinse them under cold water and pat them dry with paper towels.
  • In a bowl, mix the cornstarch, flour, baking powder, garlic powder, onion powder, salt, and pepper.
  • Gradually add the club soda into the dry ingredients, stirring gently until the batter is smooth but still thick enough to coat the shrimp.

Frying

  • Heat vegetable oil in a deep pot or fryer to 350°F (175°C).
  • Dip each shrimp into the batter, ensuring they are fully coated. Carefully place them into the hot oil one by one.
  • Fry for 2-3 minutes until they turn golden brown, avoiding overcrowding the pot.
  • Remove the shrimp using a slotted spoon and transfer them to a plate lined with a paper towel to absorb excess oil.

Making the sauce

  • Combine the fresh orange juice, orange zest, sugar, soy sauce, rice vinegar, and optional crushed red pepper flakes in a saucepan.
  • Heat over medium heat until it begins to simmer.
  • Stir in the cornstarch mixture and continue to cook until the sauce thickens, about 2-3 minutes. Remove from heat.

Assembly

  • Toss the crispy shrimp in the orange sauce until they are fully coated. Serve immediately for the best texture.

Notes

Serve with steamed jasmine rice or vegetable stir-fry for a balanced meal. Allow leftovers to cool and store in an airtight container. Reheat in a preheated oven to maintain crispiness.
