Preparation

  • Place the medium potatoes into a pot of salted water and bring to a boil. Cook until tender, about 15 to 20 minutes, then drain and cool.
  • Peel the cooled potatoes and mash them until smooth but with some texture.
  • In a frying pan, heat olive oil over medium heat, add mashed potatoes, cumin, and salt. Stir to heat through.
  • Warm corn tortillas in another skillet until pliable.
  • Take a spoonful of the potato mixture and place it onto each tortilla. Roll them tightly.

Cooking

  • Heat vegetable oil in a frying pan over medium heat. Fry tacos seam side down until golden brown, about 4 to 5 minutes.
  • Drain on paper towels to remove excess oil and serve warm.

Notes

Customize your tacos with toppings like fresh cilantro, avocado, or a squeeze of lime. For variations, try adding jalapeños or cheese to the filling.
