  • 1 kg potatoes, peeled and diced Opt for starchy potatoes like russets for the best texture.
  • 1 medium brown onion, diced Sautéing the onion is optional but enhances flavor.
  • 350 ml whole milk (plus more to taste) Adjust based on desired thickness.
  • 55 g salted butter, divided Use unsalted butter for richer flavor if desired.

Preparation

  • Begin by peeling and dicing your potatoes into small, even cubes.
  • If desired, sauté the diced onion in 1 tablespoon of butter over medium heat until soft and translucent.
  • Transfer the sautéed onion to the slow cooker and add the diced potatoes on top.
  • Fill the slow cooker with water to cover the potatoes and onions, about an inch above.

Cooking

  • Set your slow cooker to cook on HIGH for 3 to 4 hours or LOW for 6 to 7 hours until the potatoes are fork-tender.
  • Drain most of the water from the slow cooker but save about 1 cup of the starchy water.
  • Using a potato masher, mash the cooked potatoes in the slow cooker and mix in the remaining butter.
  • Stir in the reserved cup of water and whole milk to reach desired thickness.
  • Season with salt and pepper to taste, and let it heat through for a few more minutes before serving.

Notes

Serve hot with garnishes like cracked black pepper, chives, or sour cream. Pairs well with crusty bread or a green salad.
