Ingredients
  

Beef and Seasoning

  • 3 lb beef chuck roast, cut into 1 ½-inch pieces
  • 1 tablespoon salt for seasoning beef
  • 2 teaspoons black pepper for seasoning beef
  • 2 tablespoons vegetable oil for searing beef

Vegetables

  • 1 diced onion
  • 1 diced bell pepper
  • 1 tablespoon diced jalapeños adjust according to spice preference
  • 1 tablespoon minced garlic

Tomatoes and Beans

  • 1 28 oz can crushed tomatoes
  • 1 14.5 oz can diced tomatoes
  • 2 tablespoons tomato paste
  • 2 15 oz cans chili beans or red kidney beans, drained

Seasoning Mix

  • 2 tablespoons Worcestershire sauce
  • cup ancho chili powder
  • 2 tablespoons light brown sugar
  • 2 tablespoons onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon cumin
  • 1 teaspoon allspice
  • 1 cup beef broth

Additional Seasoning

  • to taste salt and pepper for final seasoning adjustment

Instructions
 

Preparation

  • Combine ancho chili powder, light brown sugar, onion powder, garlic powder, Italian seasoning, cumin, and allspice in a bowl to create the seasoning mix.
  • Season beef chuck roast pieces generously with salt and black pepper.
  • Heat vegetable oil in a large skillet over medium-high heat and sear the beef until browned on all sides.
  • Transfer the browned beef to the crock pot, scraping the skillet to include the flavorful bits.
  • Add chopped onion, bell pepper, diced jalapeños, and minced garlic to the crock pot; stir to combine.

Cooking

  • In a separate bowl, mix together crushed tomatoes, diced tomatoes, tomato paste, drained beans, Worcestershire sauce, and beef broth.
  • Pour the tomato and bean mixture over the beef and vegetables in the crock pot; stir well.
  • Cover the crock pot and set it to cook on low for 7 to 8 hours or high for 4 to 5 hours.
  • After cooking, taste the chili and adjust with more salt and pepper if needed.

Serving

  • Ladle the chili into bowls and serve with desired toppings such as shredded cheese, sour cream, jalapeños, cilantro, or green onions.
  • Optionally serve with crusty bread or warm corn tortillas.

Notes

Searing the beef is crucial for flavor development. Taste as you go and adjust spices according to preference. This chili can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
