Ingredients
  

Chicken and Seasonings

  • 4 pieces chicken thighs (bone-in, skinless) Opt for fresh, high-quality chicken.
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • to taste Salt and pepper
  • 2 tablespoons olive oil For searing the chicken.

Vegetables and Liquid

  • 1 piece bell pepper (sliced, any color)
  • 1 piece onion (sliced)
  • 3 cloves garlic (minced)
  • 1 can diced tomatoes (14.5 oz, with juice)
  • 1 cup chicken broth Ensure it's gluten-free if required.

Garnish

  • to taste Fresh parsley For garnish before serving.

Instructions
 

Preparation

  • Season the chicken thighs with salt, pepper, dried oregano, and dried basil.
  • Heat olive oil in a skillet over medium-high heat and sear the chicken for about 3 to 4 minutes on each side until golden brown.

Cooking

  • Transfer the seared chicken to the crock pot.
  • Place the sliced bell pepper, onion, and minced garlic on top of the chicken.
  • Pour in the diced tomatoes (with their juice) and chicken broth.
  • Cover the slow cooker with the lid and set it to low for 6 to 8 hours or high for 3 to 4 hours.
  • Once cooked, sprinkle fresh parsley on top before serving.

Notes

For serving, consider pairing with rice, pasta, or crusty bread. Optionally, add grated cheese like Parmesan on top.
